Over the years, I have built up quite a collection of recipes, magazines and cook books by the likes of Nigella Lawson (love her take on midnight snacks), Nick Nairn (can never go wrong with his “Top 100 Salmon Recipes”, Eric Lanlard (gorgeous tarts!), Lotta Lundgren (must mention her book “If I were your Wife” – great title, a lot of injected humour and variations/inventive recipes) and the lists goes on…
My 4 days affair with Belinda Jeffery’s “Desserts” started yesterday. I wanted to make her ‘Almond Meringue, Chocolate and Praline Layer Cake’ for my other half’s birthday a couple of weeks ago, but I did not have the guts. I was not confident because in her book she wrote “I should let you know that it’s one of the few complicated recipes…”. If she has found it to be complicated, who am I to say that it won’t be a problem for me?Perhaps that is just me, needing a challenge and wanting to learn something new.
I have completed the first part of the process that is to make the almond meringue and keep it overnight (wrapped in cling film) on a tray in the refrigerator. Tomorrow will be the day to see if this is a success. The meringue should feel firm but not crisp and it can be cut into long narrow rectangles. So, stay tuned!
Today, I will start on the praline. I have to give my full concentration as Belinda Jeffery says in her book “you need to watch it like a hawk…”. Oh dear!
